Many people don’t really think of Norway as a cheese-producing country. But that’s where the fabulous Gjetost cheese comes from.

By the way, if you have no idea how to pronounce it, and it took me quite some time, try thinking of it as ‘yay toast’. Sometimes, it’s referred to as ‘ski  cheese’ because it’s a frequent snack item for Norwegian skiers to take on the slopes as a snack. Norwegian kids eat is as candy.

And yet this cheese might be the most uncheesy-cheese you have ever eaten. Its texture is more like fudge with a sweet flavor. It’s comes from whey – as does ricotta. It’s a wonderful cheese to use in a fondue. Add cinnamon, sugar, heavy cream and (preferably) cognac and stir until smooth. Dip fruit or nuts, biscotti or even dried fruit. Just remember to heat the fondue slooooowly. Keep a little extra cream on hand to thin it a little if required.

Here are some other ideas found on the internet that we want to try:

Grate a little into apple pie filling.
Use with juniper berries as a sauce for game.
Grill on toast for breakfast with apples and pears.
Enjoy thin slices on rye crispbread
Add to waffles with sour cream and jam.
Shave onto mushroom soup
Add to potato salad, along with sliced strawberry
Use as a sauce for meatballs by making a roux, adding checken stock then shredded cheese and parsley
Mix with brown sugar, pecans, nutmeg and raisins to create stuffed baked apples
