When our tasting team saw a  simple recipe for fabulous pull-apart cheese bread, they immediately realized that it could be a wonderful dish created with foods from Las Olas Boulevard. Begin this culinary adventure by calling in to see us and asking  Susan what cheeses we have in stock that would be perfect for this.

You’ll be using thin slices of cheese – mix and match if you like. Mitch will recommend a good wine to accompany your cheese. Stroll along the boulevard to EVOO Market and call in to see Sultan. He will recommend an olive oil – you’re going to use olive oil in the recipe and to dip. Your next port of call will be Gran Forno, just a few steps away, where you can select the loaf (or loaves!) of your choice. Our team bought a fabulous olive bread.

When you get home, chill your wine if you chose from our selection of white wines, and heat your oven to 350°. Slice the cheese.   Put the loaf on a chopping board and slice into one inch slices without cutting through to the bottom crust. Rotate the board and do the same thing. The loaf will still hold together and will have a grid of one inch cuts. (There’s no need to be accurate. Approximate will do!)

Insert a slice of cheese into every cut – you can already see how delicious this is going to be! (If you wish, you can also add fresh herbs  - our team used chives). Spread a little oil in a baking dish and add the loaf. Drizzle more olive oil on the top, cover and bake for about twenty minutes. Remove the lid, sprinkle a little grated cheese on top and put back into the oven for ten minutes or so until the grated cheese is bubbly and melted.

The team served this for lunch, with some fresh fruit, extra virgin olive oil to dip and a Schamsberg 2008 – a sparkling wine produced in California; a weekend lunchtime treat! They told us that no silverware was required – just pull a chunk of bread from the loaf, dip and eat!

They report that they are going to make this into a regular weekend lunch and experiment with different cheeses, different breads and different oils – all from Las Olas!
