The humble potato

We all know that potatoes are very good for us. What’s more, they are a pretty inexpensive food and are good and filling too. There’s just one problem with potatoes – they can be a little – well – boring. But we have the answer to that!

Baked potatoes are probably the simplest of all potato dishes. Just wash the potatoes, dry, pierce the skin several times with a fork and bake. It’s a good idea to do several at a time and keep some in the fridge for later; that’s making the best use of electricity.

Then, the fun comes in. When the potatoes are cooked, halve them. Make a few slashes with a knife and add a little butter into the cuts. Then top with lots of shredded cheese and broil until the cheese bubbles. Add chopped fresh herbs just before serving and enjoy with a  salad and a good craft beer.

Experiment – try a different cheese / herb combination every week!
